Ingredients:

Directions:

  1. Preheat oven to 350 degrees, then shred zucchini and mash banana. set aside.
  2. In a large bowl, beat together eggs, oil, sugar, and applesauce.
  3. Add flour, baking powder, baking soda, cinnamon, salt, vanilla, and mix.
  4. Add zucchini and banana and mix until totally combined.
  5. Pour batter into two greased and floured loaf pans. bake for 35-45 minutes, or until a toothpick comes out clean when inserted in the center.
  6. Allow to cool for 10 minutes before removing completely to a wire rack.
