Whole Wheat French Bread

Ingredients:

  • 1 packet active dry yeast (.25 oz)
  • 1 cup warm water
  • 2 tbsp sugar
  • 1 1/2 tsp salt
  • 2 - 21/2 cups whole wheat flour
  • 1 tsp cold water
  • 1 tsp butter

Directions:

  1. Dissolve yeast in a large bowl with warm water
  2. Add sugar, salt and oil
  3. Slowly add 2 cups flour and beat until dough holds shape
  4. Add a bit more flour if dough is too sticky
  5. Turn onto lightly floured surface and knead until smooth
  6. Place in large greased bowl. Cover and let rise in a warm place until doubled (1 hr - 1 1/2 hours)
  7. Punch down, put back in bow and allow to double again (30 min)
  8. Preheat oven to 375 F
  9. Move to lightly floured surface and shape dough into a long, thin loaf (about 14 x 2 )
  10. Put loaf on slightly greased parchment paper
  11. Cover with plastic wrap and allow to rise another 20 minutes
  12. Beat together egg whites and water and brush over loaf
  13. Cut slits on top of loaf
  14. Bake for 20- 30 min or until golden brown
  15. Brush with butter while warm
  16. Cool a bit on a rack, serve warm
  17. Enjoy!
