Whipped Acorn Squash

Ingredients:

  • 1 tbsp butter
  • 2 tbsp brown sugar
  • 1/4 cup milk

Directions:

  1. Preheat oven to 350.
  2. Cut squash in half and poke holes in outer skin.
  3. Place squash upside down on baking pan and bake for 15 to 20 minutes, until squash is tender.
  4. After squash has cooled enough to handle, scoop out meat out of the skin, and place in a mixing bowl. Add butter brown sugar and milk (heat the butter and milk slightly before adding).
  5. Use beaters to mix the squash until smooth. Add salt to taste.
