  1. For the crust
  2. Pour the flour into a large bowl. Cut up the butter into small pieces, and mix into the flour until it starts to become flaky. Add one tablespoon of water at a time, mixing gently with a fork. Form the dough into a ball, wrap in plastic, and refrigerate for at least 30 minutes.
  3. Preheat oven to 375 degrees Fahrenheit. Flour a cutting board and rolling pin. Roll out the dough from the center until very thin, about 1/4 of an inch thick. Cut dough into four equal pieces, and gently press into 4 spring form tart pans. Prick the bottom of each crust with a fork and bake for 10 minutes, then set aside.
  4. For the filling
  5. Heat olive oil a heavy-bottomed pan. Add onion, apple, garlic and turkey bacon to pan; season with salt & pepper. Cook until soft and slightly browned.
  6. In a medium bowl, whisk eggs and milk together. Season with a bit salt & pepper. Chop up a handful of parsley, discard stems and add leaves to the bowl. Stir in the apple-turkey bacon mixture, cheddar and half of the parmesan.
  7. Transfer a small ladle-full of the filling into each tart pan. Bake for 15 minutes, then remove and sprinkle the rest of the parmesan over the top. Bake for 25-30 more minutes, or until golden brown. Serve with fresh apple slices.
