Ingredients:

  • 4 medium potatoes
  • 1 large onion
  • 13 eggs
  • 1/2 cup 1% milk
  • 1/3 cup feta cheese
  • 2 tbsp olive oil
  • 1/2 cup ham, chopped

Directions:

  1. Grate potatoes and carrots
  2. Chop other vegetables and saute with cooking spray.
  3. Put oil in baking pan and heat.
  4. Add potatoes, spread evenly.
  5. Add veg, spread evenly.
  6. Add ham,
  7. Mix eggs and milk, pour over veg.
  8. Crumble feta and spread evenly over top.
  9. Bake until done.
