Ingredients:

  • 3 lbs of ube yams
  • butter to taste
  • salt and pepper to taste

Directions:

  1. Cook ubes as you would regular yams or sweet potatoes by your favorite method until tender.
  2. Remove skins. when cool enough to handle.
  3. Mash well and add butter , salt and pepper.
  4. Knock the socks off people when you serve these purple sweet potatoes !
