Turkey Meatloaf With Side of Baked Potatoes

  1. Preheat oven to 350 degrees.
  2. * Prior to putting meatloaf together, I washed and poked baking potatoes. You can oil or spray with cooking spray and place in the oven directly on the sides of rack and set the timer for 15 minutes, but next time will do sweet potatoes .
  3. In a mixing bowl, combine the turkey, soup mix, shallots, celery, mushrooms and egg and mix together well. Add bread crumbs (you could use oatmeal or cracker crumbs instead) and as much of the water as needed to make the mixture moist but stay together. Shape into a loaf and place on a baking pan that has been lightly greased or sprayed with Pam. Top with the shredded swiss chesse.
  4. When the potatoes have baked for 15 minutes , add pan with meatloaf in the center of the oven rack and bake for 30 minutes. At the end of 30 minutes, turn potatoes over and rotate meatloaf pan and bake timer for 20 additional minutes (check with meat thermometer, when it reaches 170-175 degrees) remove from oven and cover with foil and let it rest 10 minutes.
