Turkey Meatball Salad

Ingredients:

Directions:

  1. Heat broiler with rack 4 inches from heat source.
  2. On rimmed baking sheet, toss scallions and peppers with 2 teaspoons oil.
  3. Season with salt and pepper.
  4. Push ingredients to one side of sheet.
  5. Place meatballs on other side of sheet and toss with 2 teaspoons oil.
  6. Broil, tossing vegetables and turning meatballs occasionally until
  7. Meatballs are cooked thoroughly and vegetables are lightly charred (10 to 12 minutes).
  8. Remove from oven and cool for 3 minutes.
  9. In large bowl, whisk vinegar and mustard with remaining 2 tablespoons oil. ( one can make and use more of same dressing if desired )
  10. Season with salt and pepper.
  11. Add lettuce, scallions and peppers- and toss to combine.
  12. Top with meatballs and sahved Parmesan.
