  1. Mix tuna, eggs, scallions, mustard, lemon juice, and 1/4 cup of bread crumbs in a bowl.
  2. Refrigerate for at least 15 minutes. Form eight croquettes with the mixture. Coat with remaining bread crumbs. Fry in olive oil until golden brown.
