                    Crispy Tuna Cakes Ingredients: 
                    
                        
                                                2 cans tuna in water  |  
                                                2 eggs  |  
                                                2 scallions, chopped finely  |  
                                                2 teaspoons dijon mustard  |  
                                                1 teaspoon lemon juice  |  
                                                1/2 cup panko bread crumbs  |  
                                                1/4 cup olive oil  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Mix tuna, eggs, scallions, mustard, lemon juice, and 1/4 cup of bread crumbs in a bowl. 2. Refrigerate for at least 15 minutes.
