Truffle Brownies with Pecan Crust

Ingredients:

  • 2/3 cup butter
  • 2/3 cup brown sugar
  • 1 1/3 cups flour
  • 1 cup finely chopped pecans
  • 1 pinch cinnamon
  • 3/4 cup butter
  • 2 tsp espresso powder , dissolved in 1
  • 1 1/2 cups sugar
  • 2 tsp vanilla
  • 4 eggs
  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 cup cream
  • 2 tbsp butter

Directions:

  1. Preheat oven to 350F Crust: Cream butter and brown sugar until light and fluffy Add flour, pecans and cinnamon Mix well Press crust into bottom of 9x13 greased pan Brownie: Place chocolate and butter in microwave safe bowl Melt in microwave on MEDIUM, being careful not to burn chocolate Whisk in espresso powder, sugar and vanilla Add eggs one at a time, while continuing to whisk Add flour and salt, mix well Pour over crust, distributing the batter evenly Bake for 30 minutes, until toothpick inserted in center comes out clean Allow to cool (room temp.) and refrigerate Glaze: Place the chocolate, cream and butter in a microwave safe bowl Heat in microwave on MEDIUM until chocolate is melted.
  2. Stir glaze until smooth Cool glaze to room temperature Pour glaze over brownies and distribute evenly Refrigerate brownies.
