Triple Layer Banana Cake

Ingredients:

  • 2 cups sugar
  • 3 eggs
  • 1 1/2 cups mashed ripe bananas (about 3-medium.)
  • 1 1/2 tsp. vanilla
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 1 cup buttermilk
  • frosting
  • 6 tbsp. peanut butter
  • 8-10 tbsp. milk

Directions:

  1. In a large mixing bowl, cream butter and sugar until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Beat in bananas and vanilla.
  4. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk.
  5. Pour into three greased and floured 9-in. round cake pans.
  6. Bake at 350 degrees for 25-30 minutes or until toothpick inserted near center comes out clean.
  7. Cool 10 minutes before removing from pans to wire racks to cool completely.
  8. For Frosting:
  9. In a large mixing bowl, beat the peanut butter and butter until smooth.
  10. Beat in confectioners sugar and enough milk to achieve spreading consistency.
  11. Frost between layers and over top and sides of cake.
