Ingredients:

Directions:

  1. Saute the leeks in the butter.
  2. Add stock, wine, and potatoes and heat to a boil.
  3. Turn down the heat and simmer for 15 minutes.
  4. Stir in zest, lime juice, milk, and cream.
  5. Season with salt and pepper.
  6. Puree in small batches.
  7. Refrigerate for 4-6 hours.
  8. Serve and garnish with chopped chives.
