  1. Heat oven to 350 degrees. Boil the sweet potatoes in their skins until very tender, about 30 minutes. Cool until they can be handled. Peel them, and cut them lengthwise into quarters.
  2. Arrange the potatoes in two layers with sprinklings of paprika, one-third of the butter, maple syrup (or brown sugar), and salt and pepper to taste, in a 9x13 baking dish. Dot the top with the remaining butter. Add the apple cider.
  3. Cover and bake until very hot, about 30 minutes. Up to this point, the dish can be prepared in advance and refrigerated. When ready to serve, remove the cover, and cook until the top caramelizes slightly, 10-15 minutes more.
