Ingredients:

Directions:

  1. Bring 2 cups water to boil in medium saucepan.
  2. Stir in couscous and remove from heat.
  3. Cover and let stand 3 minutes.
  4. Stir in dried apricots.
  5. Let stand 2 minutes.
  6. Fluff with fork.
  7. Transfer to large bowl.
  8. Whisk olive oil, lemon juice, orange juice, lemon peel, with cardamom and cinnamon to blend in small bowl.
  9. Drizzle over couscous while couscous is still warm.
  10. Mix dates, pistachios, minced shallots, and mint.
  11. Season with salt and pepper.
  12. Let stand at room temperature at least 1 hour and up to 2 hours. Garnish with mint sprigs.
