  1. FOR SPONGE CAKE
  2. Whisk egg whites with lemon juice until eggs are stiff. In a separate bowl beat yolks with sugar and vanilla until white. Add flour and meringue to mixture slowly folding in mixture with spoon. This way the air will remain in eggs.
  3. Preheat oven. Line with parchment paper and grease a 28 cm - diameter springform tin. Bake for about 45΄ at 180ο C until a knife inserted comes out clean.
  4. DIRECTIONS FOR SYRUP
  5. In a small frying pan add sugar, lemon juice and water just enough to wet the sugar. When the sugar starts to melt add strawberries and stir continuously until strawberries melt and form a rather thick syrup. Remove from heat and let it cool.
  6. DIRECTIONS FOR WHIPPING CREAM
  7. Whip cream in mixer until stiff. When cream is ready place 1/3 of cream separately and mix with 2/3 cold strawberry syrup. (Place in refrigerator)
  8. In the other 1/3 whipping cream melt some dark chocolate in baine marie and keep stirring until it has cooled down. Mix chocolate with whipping cream. (Place in refrigerator)
  9. The other 1/3 add a vanilla and a spoonful of icing sugar and mix. (Place in refrigerator).
  10. When the sponge cake has cooled down, cut it into three pieces.
  11. In the strawberry syrup we have reserved, mix a spoonful of brandy and wet the sponge cake. Add whipping cream with chocolate as a first layer, then add sponge cake, add strawberry whipping cream. Place the third sponge cake on top and spread some chocolate syrup on top. With the white whipping cream cover the outer part of the cake and decorate on top. Add whole strawberries and finally in a separate bain marrie melt the white chocolate couverture and with a spoon draw some horizontal lines.
  12. Decorate the outer part with chocolate couverture chips and cigar shaped biscuits, cut in half. Add a few on the top.
