Ingredients:

Directions:

  1. In large bowl, toss first seven ingredients.
  2. Prepare tomatoes and starfruit. Set aside along with cashews.
  3. Placed sliced cucumbers on paper napkin to drain.
  4. Whisk vinegar, oil, and black pepper together. Allow to meld at least 15 minutes.
  5. All this can be prepared ahead of time.
  6. Prior to serving, add tomatoes and cashews to salad.
  7. Pat cucumber dry, and add to salad. Toss all together.
  8. Slice each starfruit slice in half.
  9. Dress salad with oil mixture using as much as you personally like.
  10. Place starfruit around edge of bowl with points facing out.
  11. Sprinkle with parsley.
  12. Now you are good to go!
