Ingredients:

  • 7 or 8 small yellow squash
  • 2 eggs
  • 1/4 cup. milk
  • 1/2 stick of butter , cut into slices
  • 1 sleeve of wheat ritz crackers or some other buttery type of cracker, crushed

Directions:

  1. Slice the squash and parboil about 10-15 minutes, drain
  2. Add 2 beaten eggs
  3. Milk, onion, splenda and butter
  4. Pour into a casserole dish, top with cheese and then add the crushed crackers.
  5. Oven at 350 for about 25 minutes
