Spinach & Tomato Salad

Ingredients:

  • 1/2 cup pecans
  • 1/4 cup sugar
  • 1/4 cup olive oil
  • 1/8 cup vinegar , balsamic
  • 1/8 tsp minced garlic
  • 4 plum tomatoes
  • 1/4 cup feta cheese
  • 3 oz bacon
  • 1/2 cup red onion

Directions:

  1. In a nonskillet pan, place sugar evenly across bottom. Spread pecans evenly across and heat on medium high heat until sugar is melted and pecans are completely covered. Immediately, place on aluminum foil allowing to cool completely.
  2. To make the vinegairette. Combine and shake well - oil, vinegar, garlic and mustard.
  3. Light mix all remaining ingredients pouring the vinegairette over salad.
