Spinach & Red Cabbage Salad

Ingredients:

  1. Start off by cutting the cabbage up into small bite sized pieces and toss in a bowl with the diced apple
  2. Now start to make the dressing
  3. Add the safflower oil and vinegar together and mix well with whisk
  4. Add the sesame oil
  5. Add 4 tablespoons of the the maple syrup
  6. This is where your tastebuds come into play. You are looking for a good balance between the nuttiness of the sesame oil and the sweetness of the syrup. The sesame oil is a very strong flavor, and maple syrup with differ based on the region it comes from. So you may have to add more syrup.
  7. Once you have made the dressing to your liking, add about 2/3's of it to your cabbage/ apple mixture and give it a good mix
  8. Now if you have not washed your cilantro yet....wash it now. Remember you are only using the leaves in this recipe....no stems
  9. Add the cilantro to the cabbage and apple...mix well
  10. If you havent washed the spinach do it now....then add to the top of the salad mixture but dont mix in yet
  11. Drizzle the remaining 1/3 of the dressing to the spinach. Let sit for about 2-3 mins then mix all together.
  12. Sprinkle the pumpkin seeds on top...you are done
  13. A big bowl is best for putting this together.
