Spinach and Sweet Potato Sauté

Ingredients:

Directions:

  1. Sauté onion over medium heat for 5 minutes stirring frequently. Add garlic and continue to sauté for another minute.
  2. Add seasonings and stir to mix thoroughly. Add broth and sweet potatoes. Simmer covered over low heat, stirring occasionally, until sweet potatoes are tender, about 15 minutes.
  3. Uncover to allow sauce to thicken and cook another couple minutes. Add cilantro, salt, and pepper to taste.
  4. While potatoes are simmering bring lightly salted water to a boil in a separate pot and cook spinach in boiling water for about 3 minutes.
  5. Drain and press dry with spoon. Chop and add to sweet potatoes. Mix well.
