Ingredients:

Directions:

  1. In a soup pot, heat olive oil over medium high heat.
  2. Crumble in sausage and add onion cook until no longer pink.
  3. Add the garlic and cook about 2 minutes longer.
  4. Add broth and tomatoes, turn heat up to high, and bring to a boil.
  5. Add the tortellini and cook according to package instructions.
  6. When tortellini is almost done, add spinach, I also added salt, pepper, crushed red pepper, cayenne, and also about 1/2 cup of parmesan cheese.
  7. Cook until the spinach is cooked.
  8. I put more parm cheese on top but that’s just me.
