Ingredients:

Directions:

  1. Heat the oil in a large pan and cook the onion and garlic for about 3 minutes
  2. Add the chili powder and cook further 1minute
  3. Add the red peppers, carrots, potatoes and celery
  4. Stir well then cook for a further 4 minutes stirring occasionally........
  5. Add the vegetable stock, followed by the peanut butter and corn..
  6. Stir until thoroughly combined
  7. Season well
  8. Bring to a boil.cover and simmer now for 20 minutes until all vegetables are tender..
  9. Serve with garnished chopped peanuts.........enjoy ..........
