Ingredients:

  • 2 cups heavy cream

  • farina is a cereal food , frequently described as mild-tasting, usually served warm , made from cereal grains. in contemporary english use, the word usually refers to semolina or cream of wheat made from soft wheat. wheat farina is a carbohydrate-rich food, often cooked in boiling water and served warm for breakfast, or cooked with milk and made into semolina pudding. it is used as an ingredient in many dishes and in processed foods such as breakfast cereals and pasta.
  • the word farina comes from either the italian and catalan word for flour ; the old romanian word for flour, farina ; or in portuguese, farinha . the spanish word is harina , also very close. (this similarity is not surprising, as these are all romance languages.)

Directions:

  1. Preheat oven to 325 degrees F
  2. Grease and flour two 9-inch round cake pans.
  3. Beat egg whites until stiff and set aside
  4. In a separate bowl, beat egg yolks until very light in color
  5. Slowly beat in the sugar
  6. Mix in the vanilla
  7. In a small bowl, mix together the farina and bread crumbs
  8. By hand, fold the farina mixture into the egg yolks
  9. In the small bowl, combine the ground pecans and baking powder, then fold this mixture into the batter
  10. Finally fold in the beaten egg whites
  11. Spread the batter in prepared pans
  12. Bake 35 - 40 minutes, until the cake is lightly browned on top and springs back when lightly touched in the center.
  13. Remove the pans to wire racks, carefully run a small knife or spatula around the inside edge of the pan.
  14. Cool 15 - 20 minutes before removing the cakes from the pans; cool completely.
  15. Meanwhile back at the ranch; place the heavy cream, confectioners sugar and vanilla in a chilled mixing bowl.
  16. Using an electric mixer, whip the cream - whip it good!! LOL
  17. Until very stiff - the cream, not you!!!
  18. Spread some of the whipped cream on bottom layer; add the top layer and frost all over with remaining whipped cream.
  19. Per serving - a lot of calories and a lot of fat, 1 gram fiber!!!
