Salsa Scrambled Eggs

Ingredients:

  • 3 eggs
  • 1/8 cup heavy cream or milk
  • 1/4 to 1/2 cup of shredded cheddar jack cheese
  • pinch of salt
  • pinch of pepper
  • 1 to 2 tbsp of butter or margarine

Directions:

  1. Add the butter or margarine to a pan over medium heat.
  2. Pour the salsa into the pan and saute until just bubbling.
  3. Add the eggs and milk or cream to a bowl and beat with a fork.
  4. Add the egg mixture to the pan with the salsa still in it.
  5. Add the salt and pepper.
  6. Stir all the ingredients together in the pan.
  7. Cook until about half way done.
  8. Add the cheese in the pan and stir.
  9. Finish cooking the egg mixture until desired doneness/consistency.
  10. Goes great with tortillas in a burrito or with a slice toast.
