Route 66 Home Made Dinner Rolls

Ingredients:

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 2 tbsp warm water
  • 4 cups sifted flour
  • 1 tbsp baking soda
  • 2 tbsp salt
  • 2 cups sifted flour

Directions:

  1. Warm shortening, sugar and milk in saucepan until shortening is melted.
  2. Add mashed potatoes and cool.
  3. Dissolve yeast in warm water and add to beaten eggs.
  4. Add this to the first mixture.
  5. Sift flour with baking powder, soda, and salt.
  6. Stir liquid mixture into these dry ingredients.
  7. Put into large bowl and let rise in warm surroundings to twice bulk.
  8. Cover overnight with light cloth.
  9. The next morning add remaining flour and knead until satiny.
  10. Put the dough in a greased bowl and let rise in warm surroundings.
  11. Knead on lightly floured board.
  12. Form into rolls then place on a greased pan and let stand 5 minutes in warm surroundings until double in size.
  13. Bake 15 minutes at 425.
