Roasted Garlic & Spinach Spirals

Ingredients:

Directions:

  1. Preheat oven to 400 degrees.
  2. Trim top of garlic just enough to cut tips off center cloves; discard tips.
  3. Moisten head of garlic with water; wrap in foil.
  4. Bake 45 minutes or until garlic is soft and has a mellow garlicky aroma; cool.
  5. Remove garlic from skin by squeezing between fingers and thumb; place in food processor.
  6. Rinse spinach leaves; pat dry with paper towels.
  7. Remove stems; discard.
  8. Finely shred leaves by stacking and cutting several leaves at a time.
  9. Place in medium bowl.
  10. Add bean, oregano, black pepper and red pepper to food processor; process until smooth.
  11. Add spinach; mix well.
  12. Spread mixture evenly onto tortillas; roll up.
  13. Trim 1/2 inch off ends of rolls; discard.
  14. Cut rolls into 1-inch pieces.
  15. Transfer to serving plate; garnish with fresh veggies if desired.
