Raisin Pumpkin Cookies With Honey

Ingredients:

  • 1/2 cup shortening
  • 2 eggs
  • 1 1/2 cups solid pack pumpkin
  • 2 1/2 cups flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 1/2 cups raisins
  • 1 1/2 cups walnuts, chopped

Directions:

  1. Preheat oven to 350°.
  2. In mixer, cream together honey and shortening. Add eggs, one at a time and blend completely. Stir in pumpkin.
  3. In a bowl, combine flour, baking powder, cinnamon, nutmeg and salt. Gradually add dry ingredients to wet and mix thoroughly.
  4. Fold in raisins and walnuts. Chill dough for 30 minutes. Drop by teaspoonfuls onto cookie sheets. Bake 15 minutes or until tops begin to brown.
  5. Yield: 4-5 dozen
