Quick Skillet Bread

Ingredients:

  • 1 tbsp oil + 1 tbsp butter (or) 2 tbsp bacon fat
  • 2 cups flour
  • 2 1/2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups buttermilk--(don'tsp use lowfat--you're needing a high fat here)

Directions:

  1. In a heavy 12 inch skillet (pref non stick) heat 1 tablespoon of your fat.
  2. Sift flour, soda and salt together.
  3. Quickly stir in buttermilk until just moistened.
  4. Place batter into the melted fat, spreading batter across pan.
  5. Place lid onto skillet.
  6. Cook bread, covered, over low to med heat for about 10-12 minutes.
  7. Lift one side of the bread gently, with large turner, and flip.
  8. Add remaining tablespoon of oil to skillet before the final flip.
  9. Continue to cook other side for 10-12 minutes,
  10. Cut into wedges and serve with your favorite butter and condiments.
