Ingredients:

Directions:

  1. Place potatoes in a medium bowl.
  2. Pour in boiling water.
  3. Stir until well blended and let cool.
  4. Stir in egg, salt and pepper.
  5. Blend in flourto make a fairly stiff dough.
  6. Turn dough onto a well floured surface.
  7. Knead lightly.
  8. Divide dough into 1/2.
  9. Shape each 1/2 into a long thin roll about the size of a breadstick.
  10. Dip knife into flour and cut into bite sized pieces.
  11. Bring salted water to boil in a large pot.
  12. Add a few gnocchi to boiling water.
  13. As gnocchi rises to surface remove with a slotted spoon.
  14. Repeat until all cooked.
