Pumpkin Prune Cake

Ingredients:

  • 3/4 cup sugar
  • 1 egg
  • 1 tsp cinnamon
  • 1/3 cup milk
  • 1 cup flour , plus
  • 3 tbsp flour
  • 1/4 tsp salt
  • 1/2 tsp ground ginger
  • 1/2 cup chopped prune

Directions:

  1. In a bowl, cream margarine with sugar.
  2. Beat in the egg, then pumpkin and milk.
  3. In another bowl, stir together flour, baking powder, salt and spices.
  4. Beat dry mix into the pumpkin mixture, and then stir in the prunes.
  5. Turn batter into greased and floured 8 square baking pan.
  6. Bake at 375 for 35 minutes.
  7. Cool on rack.
