Applesauce Oatmeal Cake

Ingredients:

  • 1 1/2 cups sugar
  • 4 eggs
  • 1 cup applesauce , plus an additional
  • 2 tbsp applesauce
  • 3/4 cup milk
  • 1 1/2 cups flour
  • 1 1/2 cups rolled oats
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 3/4 tsp nutmeg
  • 3/4 tsp clove
  • 1 1/2 cups raisins
  • 1 1/2 cups walnuts, chopped

Directions:

  1. In a large bowl, cream butter with sugar. Beat in eggs, then applesauce and milk.
  2. In another bowl, stir together flour, oats, salt, baking powder and the spices.
  3. Beat into applesauce mixture.
  4. Stir in raisins and nuts.
  5. Turn batter into greased and floured tube pan.
  6. Bake cake in a 350F oven for 65 minutes, or until cake test done with a toothpick.
  7. Let cool on a rack.
