Ingredients:

  • 3 eggs
  • 1 tbsp diced onion
  • 3 tbsp flour
  • 1/2 tbsp salt

Directions:

  1. Preheat griddle on medium.
  2. Beat eggs, onion,flour,and salt together.
  3. Add shredded potatoes over.
  4. Stir until blended.
  5. Try 1/3 cup portions on greased griddle until golden brown on each side.
