Potato Bacon And Corn Chowder

Ingredients:

Directions:

  1. In a large pot boil the potatoes just till tender.
  2. While the potatoes are boiling fry up the bacon till crisp; set aside and reserve a couple of tablespoons of bacon grease.
  3. Drain potatoes in a strainer & let sit.
  4. In the bottom of the potato pot melt butter and add reserved bacon grease.
  5. Saute onion till tender.
  6. Whisk in the flour till combined; and gradually add about 1 cup of milk.
  7. Whisk until thickened
  8. Add the drained potatoes and remaining milk.
  9. Let simmer, but do not boil. Until it's heated through.
  10. About 5 to 10 minutes before serving chop up the reserved bacon, add to the pot along with the corn.
  11. Season with salt & pepper
  12. Ladle into bowls and garnish with some nutmeg.
