Ingredients:

  • 1/2 lb. beef, top round
  • 1 medium onion
  • 1 cup mushrooms
  • 1 tbsp. canola oil
  • 1 cup beef broth
  • 3 tbsp. soy sauce
  • 3 tbsp. cornstarch
  • 1 clove garlic
  • 1 tsp. sugar
  • 1 salt

Directions:

  1. Slice onion, peppers and mushroom.
  2. Chop garlic.
  3. Cut beef into thin strips. Spray non-stick pan with no-fat cooking spray. Brown meat. When cooked, remove from pan and set aside.
  4. Heat oil in same pan. Add peppers and onions. Cook down until tender. Then add mushroomsand garlic and continue cooking.
  5. In bowl mix broth, soy sauce, cornstarch, and sugar. Mix well.
  6. When veggies are done (depending on your taste), add back meat. Stir in liquid and heat until bubbling. Season with salt & Pepper to taste. The sauce will thicken as it cooks.
  7. I serve this over brown rice. Enjoy
