Peach Cobbler Casserole

Ingredients:

  • 6 to 8 ripe peaches
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/2 tsp cinnamon
  • topping
  • 1 1/2 cup flour
  • 1/4 tsp salt
  • 2 tbsp sugar
  • 1/2 stick butter or margarine
  • 1 egg
  • 6 oz milk

Directions:

  1. Unlike cobblers which may be cut into wedges or served on individual shortcakes or biscuits, this is more like a peach casserole with batter topping.
  2. Wonderful served with ice cream!
  3. Wash and slice peaches into wedges.
  4. Place in a large bowl with sugar, cornstarch, lemon juice and cinnamon and mix well to combine.
  5. Place peach mixture into large casserole dish.
  6. Make topping.
  7. Combine flour, salt, sugar and baking powder and blend well.
  8. Cut in butter or margarine until coarse crumbs.
  9. Combine fork beaten egg and milk and stir into flour mixture to make a batter.
  10. Spread batter evenly over peach mixture.
  11. Bake 425 about 30 minutes or topping is golden.
  12. Serve warm by spooning topping and peaches into serving dishes.
  13. Serve with ice cream, or whipped cream if desired.
