  1. Preheat oven to 375. Put cut potatoes in large bowl of cold water, keep draining and refilling till water is clear and starch is gone. refill bowl with cold water and let sit for 10 minutes, drain potatoes on paper towel and pat dry. let sit another 5 minutes, pat dry. In very large bowl add potatoes, sprinkle with olive oil, add onion powder, garlic powder, salt and pepper. Shake to coat. Spread evenly on foil lined cookie sheets (do not crowd)
  2. Place in oven, rotating pans when you turn over fries. Is a bit of work, but the end result is worth it. I find every bag of potato is different, and cook times vary, but, about 10 minutes, turn over potatoes, rotate pans. 3 times. Enjoy!
