Onion Fig And Gorgonzola Mini Puffs

Ingredients:

Directions:

  1. Bake pastry shells according to package's directions. Remove tops and allow to cool.
  2. Meanwhile, heat a large heavy skillet with butter or oil over medium heat. Add onions and figs and season to taste with salt and pepper. Allow to cook 10-15 minutes without browning.
  3. Once onions begin to turn golden, add vinegar and continue cooking 20-30 additional minutes, until sticky and caramelized.
  4. Preheat oven to 350 degrees.
  5. Carefully stuff mini shells with onion and fig mixture. If desired, stuff a large crumble of bleu cheese in as well. Top with small crumbles of gorgonzola.
  6. Bake shells another 5-7 minutes until pastry is golden and cheese is all lovely and oozy.
  7. Serve immediately or allow to cool to room temp before serving.
