Olive Garden Zuppa Toscana

Ingredients:

  • 2 whole russet baking potatoes cut lengthwise in quarters, then across into 1/4 in slices
  • 2 cup kale large veins removed, cut into strips
  • 4 cup water

Directions:

  1. Brown sausage in large soup pot.
  2. Remove from pan onto paper towels to absorb grease
  3. Saute onions in pan for a couple minutes, or until they start to brown.
  4. Add garlic, stirring constantly for 30-60 seconds.
  5. Add chicken broth, water, and potatoes.
  6. Cook on medium heat until potatoes are done.
  7. Return sausage to pot.
  8. Simmer for another 10 minutes.
  9. Turn to low heat.
  10. Add kale and cream.
  11. Heat through and serve.
