Ingredients:

  • 6 oz white baking bar, they may say chocolate but usually they are not really chocolate
  • 1 1/2 tsp mint extract
  • 8 drops green food coloring
  • 1/2 cup mini chocolate chip (optional)

Directions:

  1. In medium saucepan combine bars, broken up and 1/2 cup cream.
  2. Stir constantly over low heat until melted and smooth.
  3. Stir in mint extract.
  4. Remove from heat and cool completely.
  5. In medium size mixing bowl, beat on medium speed remaining cream and the powdered sugar until stiff peaks form.
  6. Add the food color and beat just until color is uniform.
  7. Gently fold in the cooled white mixture and optional chips if using, until well blended.
  8. Cover and chill for at least 2 hours.
  9. Serve as desired.
