Ingredients:

  • 1 cup whole milk
  • 2 large eggs
  • 1 cup flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup finely chopped provelone
  • 1 1/2 tbsp chopped chives

Directions:

  1. Wisk together milk, eggs, flour, 1 TBSP butter, salt and pepper until smooth.
  2. Stir in cheeses and chives.
  3. Chill and rest for an hour.
  4. Preheat oven to 425 degrees with the rack in the upper third of the oven.
  5. Butter the muffin pan with remaining TBSP butter then heat in oven until butter sizzlez, about 2 minutes.
  6. Gently stir batter and divide among muffin cups, filling them 2/3 of the way.
  7. Bake until puffed and golden brown, 18-20 minutes.
