Ingredients:

  • 1-1/2 cups firmly packed light brown sugar
  • 2/3 cup half and half
  • 1/8 tsp. salt
  • 1-1/2 cup pecan halves

Directions:

  1. Combine sugar, half and half and salt in a deep 3 quart casserole.
  2. Mix well then stir in butter.
  3. Microwave on high for 7 to 9-1/2 minutes or until mixture reaches soft ball stage (235 degrees) stirring once.
  4. Stir in pecans then cool about 1 minute.
  5. Beat by hand until mixture is creamy and begins to thicken about 3 minutes.
  6. Drop by tablespoon on wax paper.
  7. Let stand until firm.
