Mexican Yellow Rice Casserole

Ingredients:

Directions:

  1. Brown hamburger meat and drain.
  2. Add taco seasoning and approximately 1/2 cup water.
  3. Simmer 10 minutes.
  4. Cook rice as directed on box (leave water in rice, do not drain).
  5. Mix cheese and tomatoes and melt in microwave.
  6. Combine all ingredients, using only a few of the crumbled Doritos.
  7. Pour into casserole dish and sprinkle remaining Doritos on top of mixture.
  8. Bake at 325 F for 25 minutes or until bubbly.
