Ingredients:

  1. First, prepare the filling for this dish.
  2. For this, do the following: Heat oil in a pan.
  3. Add cumin seeds and allow to crackle.
  4. Add greenpeas, ginger and green chilli.
  5. Mix well.
  6. Once the raw smell of ginger is gone and the green peas are cooked, add corriander powder, kasori methi, red chilli powder, chat masala and salt.
  7. Mix well.
  8. Add corriander leaves and mix well.
  9. Now prepare the dough.
  10. For this, put ajwain seeds, oil, flour and water in a bowl.
  11. Knead well and make dough.
  12. Roll lengthwise.
  13. Now make small round balls out of this (like you would make for rotis/chapatis).
  14. Roll out on a lightly floured board till about 6 inches in diameter.
  15. Now, put 1-2 tsps.
  16. Of the above prepared stuffing in the center.
  17. Close and give shape of a potli ('potli'is a Hindi word which means, Small Basket ).
  18. Likewise, repeat for all the balls of dough.
  19. Heat oil in a deep frying pan.
  20. Drop potlis, gently, into the hot oil and deep fry till golden brown.
  21. Remove from oil.
  22. Drain on clean kitchen towels/napkins.
  23. Serve hot.
