Maple Walnut Biscotti With Chocolate Maple Glaze

Ingredients:

  • 1/2 cup cornmeal
  • 1/4 tsp salt
  • 2 eggs
  • 1 tsp maple extract
  • 1/3 cup heavy cream
  • 1 tsp maple extract

Directions:

  1. Preheat the oven to 350 degrees. Line a large baking sheet with parchment paper or silpat.
  2. In a large mixing bow, sift together flour, cornmeal, baking powder, and salt.
  3. Lightly beat the eggs. Stir in the maple syrup and extract. Add egg mixture and walnuts to the dry ingredients and mix just until the dough is smooth.
  4. Using a rubber spatula and floured hands, scoop half of the dough out of the bowl and onto one side of the baking sheet. Shape the dough into a 15-inch long log. Make a second log on the other side of the baking tray with the remaining dough. Space the logs at least 6-inches apart.
  5. Bake for 25 minutes, until the top of each biscotti log is firm. Remove them with a long spatula to a wire rack and cool for 10 minutes. Cut each log on a severe diagonal into 1/2 inch slices and place them, cut side down, on the baking sheet.
  6. Reduce the oven temperature to 325 degrees and bake for 15 minutes turning them half way through. Remove the biscotti from the pan and place on a wire rack. Allow them to cool completely.
  7. For the glaze, place the chocolate chips in a large. Bring the cream to a boil in a small sauce pan. Remove from heat and pour over the chocolate. Add the maple extract and let it sit for a minute. Stir slowly and constantly until all the chocolate has melted and becomes smooth.
  8. Dip one end of each biscotti into the chocolate, spinning it to make sure the chocolate covers both sides. Allow to cool so that the chocolate forms a solid coating.
