Ingredients:

  • 1/2 cup oat flour
  • 1/2 cup oatmeal
  • 1/4 cup flax seed
  • 1/4 cup teff
  • 1/2 cup stevia
  • 1 large apple
  • 1 large carrot
  • 1 small zucchini
  • 1/2 cup raisins

Directions:

  1. Heat oven to 350 degrees.
  2. Spray 12 cup muffin tin with cooking spray.
  3. Mix dry ingredients in mixing bowl.
  4. Everything else is pureed in a food processor.
  5. Fold fruit and veggie puree into flour just until moist.
  6. Spoon batter into muffin cups.
  7. Bake 15 minutes or until toothpick inserted in center of muffin comes out dry.
