Lox & Onion Omelet

Ingredients:

  • 6 eggs
  • 3 oz lox
  • 2 slices muenster cheese
  • 2 tbsp butter
  • 1/4 tsp salt

Directions:

  1. Dice onion.
  2. Shred lox into small pieces.
  3. Melt butter in frying pan.
  4. Fry onions.
  5. Put shredded lox into pan.
  6. Crack 6 eggs into pan on top of onions/lox mix.
  7. Mix everything together. Don't cook like a traditional omelet.
  8. Take of stovetop burner.
  9. Place slices of Muenster cheese ontop of omelet.
  10. Cover pan to allow cheese to melt.
  11. Salt to taste.
