Ingredients:

  • 3 cups of biscuit mix
  • 3/4 cup of brown sugar
  • 1/4 cup of a.p. flour
  • 1/2 cup of milk
  • 1/4 tsp of ginger
  • 1/2 tsp of cinnamon
  • fresh nutmeg on rasp, six passes should do
  • 1 cup of snipped dates

Directions:

  1. In a large bowl, combine biscuit mix, brown sugar and flour. Dissolve the espresso powder in the milk and add to the dry ingredients, along with the beaten egg, bananas and spices.
  2. Beat until well blended. Fold in dates and nuts.
  3. Pour into two prepared loaf pans (greased and floured) equally.
  4. Bake in preheated 350 degree oven for 40 to 50 minutes. (Smell is a great indicator of doneness, but I prefer to use the cake tester a few minutes before I think it is done. Cool in pans for 10 minutes and then cool on wire rack for another 20. Double wrap or zip lock for freshness.
