  1. Rehydrate the mince with the stock, allow liquid to absorb, about 15 minutes. Now put all first 9 ingredients into a mixing bowl and mix well. In batches place in a food prcessor and blend until smooth. Once all blender return the mixture to the mixing bowl and with wet hands form into 20 balls place on a greased baking tray and cook in the oven gas mark 6 for 20-30 minutes, or until firm to touch and golden.
  2. Meanwhile chop an onion and saute until soft but not coloured in a saucepan, add the garlic and fry for a further 2 minutes. Add the tomatoes and tomato puree and cook for
  3. 5-10 minutes until thickened slightly, now add the herbs, take off the heat and liquidise with a hand blender until smooth.
  4. When meatballs are cooked serve with pasta or risotto rice with the tomato sauce poured over.
