Ingredients:

Directions:

  1. Preheat oven to 375°; spray a 13 x 9 inch glass baking dish with cooking spray.
  2. In a bowl, beat eggs; stir in pasta sauce, bread crumbs, onion, Italian seasoning, salt, and beef until well blended.
  3. Press mixture in bottom of baking dish.
  4. Bake uncovered 45-55 minutes or until meat thermometer inserted in center or loaf reads 160°.
  5. Meanwhile, make both pouches of mashed potatoes as directed on the box, using milk, hot water, and butter.
  6. Spoon any excess juices from baking dish.
  7. Spread mashed potatoes over meat loaf; sprinkle with cheese.
  8. Bake uncovered 10-15 minutes or until top begins to brown.
  9. Let stand 5 minutes before cutting.
  10. *May use bulk Italian pork sausage for a portion of the ground beef; may add 1 teaspoon red pepper flakes to the pasta sauce, for more punch.
